My Son’s Recipe: Bacon Wrapped Cream Cheese Stuffed Jalapenos

I buy these at the store a lot because they are low carb and fit well into my food plan.  Plus I can eat one and be totally satisfied.

Plus my son CJ loves them too.

But a few weeks ago he said to me, “I think I can make these.  They don’t look that hard.”

And I have to admit I had thought that myself but the laziness and lack of desire to cook was keeping me from trying it.

And it’s been YEARS since I got really creative in the kitchen. 

Partly because of the pain in my back and my knees and my feet when I stood up.

And other reasons.

But here is my son saying “Hey Mom.  Why are we paying for these when I think I can make them?”

So I told him we could go home and look up a recipe but he frowned at me and said “Nah.  I know what’s in them.”

So he steered the grocery cart around and we bought jalapenos and cream cheese and bacon.

I sliced the jalapenos in half but he did everything else!

Like flicking out the seeds!

I guess you can tell this happened before my son got his hair cut!

After this, he had to fill them up with cream cheese.

This turned out to be tricky.

After this, he wrapped the bacon around them!

And then we put them in the smart oven to bake at 375 for about 15-20 minutes.

Finished product!

He makes these for us quite often.

Like on this day too!

These may have had sticky little fingerprints all over them and perhaps they weren’t Martha Stewart presentation ready…but to me they were the best bacon wrapped jalapenos I’ve ever had!

Because he made them for me 🙂

Your son is adorable. I love it when the kids get into cooking. My daughter makes these too. We call them jalepeno poppers except we mix sausauge in with the cream cheese. Not quite as healthy, but very delicious. 😉 Always a huge hit at parties.

I can't bellieve your little guy will eat that. Now my kids would try eat, but when they were younger they weren't that adventurous with food! Good for him! Maybe he can try using 2 spoons next time to help stuff the peppers.

I can't seem to handle *heat wise* spicy food but these look so mouth watering good…that I might just have to have the little chef in my household make them. 😀 Great post!

Adorable and amazing. I really like the idea that you're losing weight while also eating foods that non WLS people eat. That's what I'm trying to do as well…occasional small portions of things that feel "bad for me" are only bad if I then binge.
I have been trying to cook a lot more–blogging recipes has kept me motivated.
Mostly though, THANK YOU–you're an inspiration (and your son is adorable!)

What a cute kiddo! I make those all the time, super good. Sometime we mix in a little cheddar – you can almost never have too much cheese :p

Cute. I’ve done the same thing with chicken tenderloins. Sometimes hubby grills then; other times they go in the oven. Yum!
